Try this super-simple, super-tasty (fake) Beef Stroganoff. I serve it over noodles, but it would work just as well over rice. In our house we skip the mushrooms.
1 lb. cubed stewing beef
1 small onion, chopped
handful of chopped mushrooms
1 can beef broth (14-1/2 oz.)
1 tub Chive and Onion flavored cream cheese (8 oz.)
Place beef, onion and mushrooms in crock pot. Pour beef broth over all. Cook on low for 6-8 hours or high for 3-4 hours. Add cream cheese just before serving. Stir until completely melted and incorporated. Heat for maybe 10 more minutes to thicken sauce a bit. Serve over hot cooked pasta or rice.
